WWDH - Roasted Sweet Potato Pasta
This week's Wednesday with Donna Hay pick comes from Chaya. She has chosen Roasted Sweet Potato Pasta.
The pasta was supposed to be 400g of spaghetti or linguine, but I had 250g of spiral pasta in the pantry, so that is what I used. I also only used one sweet potato and one tomato, substituted cheddar for parmesan and left out the feta and olive oil. I still think my version of this pasta tasted fantastic!
This pasta is very satisfying and is very tasty - it is perfect for dinner, and for lunches - which is what I will do with the leftovers. I would happily make this again.

This was good. I actually made it as written, except for the lemon juice. Easy and a definite repeat
ReplyDeleteI am glad you liked it. I admit to giggling as I read your changes in the recipe. I do that at times but this time, I was pretty true to it and it was good.
ReplyDeleteTo be honest I've never tried sweet potato and pasta together but if you say it's great it must be! :)
ReplyDeleteWhat a fabulous pasta
ReplyDeleteI've never thought of pairing sweet potato and pasta either! I love sweet potato though, so I am sure it would work very well.
ReplyDeleteI'm obsessed with sweet potatoes right now!
ReplyDeleteI like that you took the general idea and switched or adapted almost everything!.. at least that's how I read it. I'm sad I missed this one; it sounds easy and delicious.
ReplyDeleteWhy do I never think to make this sort of pasta dish when I have some leftover roast veg - it looks delicious
ReplyDeleteI am always looking for good lunch food. This is it I think.
