FFwD - Creamy Cauliflower Soup sans Cream


This week's French Friday with Dorie challenge made my heart sink.  Soup? Cauliflower soup?  This did not sound promising on either count.   And unfortunately, making it did not change my mind.

I looked at someone else's photo of this soup and noticed that it was (a) off white and (b) liquid.  My soup looks like mashed apple.  And it tasted, sadly, like mashed cauliflower.  You can see where this is heading, right - I am not a fan.  Soup is not one of my favourite things unless it is Campbells or Heinz Chunky out of a tin, and this soup did not change my mind.  Sorry.

  1. A healthy dose of bacon crumbled on top helped. I thought it was okay, but probably not my new favorite.
    The Dude said next time just roast the cauliflower and hold the broth :-)

  3. Interesting. I thought mine was a bit too watery. Maybe the size of the cauliflower? I liked mine better the next day, would definitely add some cream next time, and toppings are a must!

  5. Your Post is either very, very sad or hilarious. I went the hilarious route. I love cauliflower so this worked for me. Unfortunately, my photography skills turned the beautiful and silky smooth cauliflower soup into a putrid-appearing light pink color on my Post. Not good.
    So, this is one recipe you will not be returning to but..... you tried.

  6. No worries. Not every recipe will be a win. At least you tried it. When I see a recipe I know that I won't like, I just skip it altogether.

  7. My husband feels as you do about Cauliflower…there was no way he was going to eat it…I on the other hand really enjoyed it! Sorry this wasn’t an enjoyable recipe… funny post!

  10. I think the size of the cauliflower must have been a factor, too. I felt mine could have used more, but yours is almost a puree rather than a soup. Disappointing, for sure.

  11. I guessed before I read this that you would not be a fan of cauliflower soup...I can't imagine not being a soup fan, but I know you are not, and this didn't seem to be a flavor combination I associate with your tastes. Oh, well, you are a good sport for trying.
