FFwD - Lime Honey Beet Salad
This week's French Friday with Dorie recipe is Lime Honey Beet Salad. It doesn't sound like much, and to be honest, it isn't much - beet wedges are dressed with a dressing of cider vinegar (in my case, white wine vinegar), olive oil, lime zest and juice and honey. I like beets, and the dressing lifts them to another place, but I can't really think of this as a recipe.
I was not going to cook beets because I hate dying my fingers purple in the process of peeling them, so I bought pre-cooked, canned beet wedges. I served it alongside whatever I was having for dinner as a side dish.

ReplyDeleteBeetroot and I have a love hate relationship - I love it in baked goods, and when it's baked, but am less fond of it by itself. I do like the idea of a lime honey dressing though!

ReplyDeleteI love beet, but have to admit never made thema t home, i always buy in the bottle for my salades etc...these look so good.

ReplyDeleteSorry to hear this wasn't a hit for you. I used pre-cooked beets too. To be honest, I haven't cooked beets in years, probably since the day I discovered that they sell pre-cooked beets in my produce aisle.
ReplyDeleteI have to say that I enjoyed this one though. It wasn't exciting, but a great weeknight option; quick and nutritious.
I think I have seen people use gloves so they don't get their hands stained - I never do and find it washes out quickly enough - sounds like a nice side dish

ReplyDeleteYou are so right - there wasn't much to this, but I sure enjoyed it and pretty much ate the entire salad by myself! I haven't had beets in years, but I think they will become a regular addition to our table now.
ReplyDeleteI quite liked this salad, but you're right, my hands were badly stained from peeling the beets I roasted. It was worth it, though - I've got a lot of beet lovers in my family.
