Wednesdays with Donna Hay - Hummingbird Slice



It is Anzac Day today, and Australians have a national holiday to remember the contribution of service men and women from all wars fought by this country.  A big cheer to all those service men and women marching in today's parades around the country.

From my blog's perspective, today is the last Wednesday with Donna Hay for a while as the group goes into hiatus.  Today's recipe is Hummingbird Slice, chosen by yours truly.  Donna's version of hummingbird cake/slice is light and spongy and fruity all at once.  Donna suggests serving it with honey, but it really doesn't need it - the slice is sweet  enough from the carrots, banana, pineapple and sugar without needing frosting or honey, unless of course you want it.

It is cold and wet miserable in Melbourne at present, so excuse me while I wrap myself in a blanket and curl up with a good book and engage in some California Dreamin'.

  4. Looks great! And, I agree, the honey wasn't needed as it was sweet enough without it. We liked this very much and I am certain I will make it again as Mark loved taking it in his lunches for work. Thanks for the pick. Hopefully after hiatus we will be cooking DH again together...am loving her recipes and style/ease/simplicity.   5. I love hummingbird cake - so I am sure I would like it as a slice - is it a bit denser than the cake? I quite like cream cheese frosting on hummingbird cake but not an overly sweet one!

  6. I love hummingbird cake, but I haven't had it in too long. My grandma makes a great hummingbird cake. Aren't grandmas the best? My grandparents visited last week and brought a strawberry/pecan/coconut cake. When Paul and I finish eating that, I'll have to try the hummingbird slice. I like not having to frost things!

  7. Ah, now I know what Anzac Day is and it is wonderful to recognize the men and women who serve in the military. I love hummingbird cake and would like to try Donna's version. It looks very good!
