FFwD - Coconut Friands


This week's French Fridays with Dorie recipe is Coconut Friands.  Normally friands are made with  icing sugar, egg whites and almond meal, but these friands are made with egg whites, coconut, castor sugar and flour.  The coconut factor struck fear into the hearts of non-coconut lovers in our group, but I am a fan of coconut, so I wasn't phased.

These were sweet, light and delicious - I really enjoyed them, more so than a denser regular friand.  However, Dorie must have used awfully small tins to get 20 cakes - I barely got 12.

  5. Yay, I'm so happy to see that mine did not look drastically different than yours. I really had no idea what I was doing. But they seem to have turned out ok and I agree that they were really tasty.

  6. I am definitely on the pro coconut side of this one. I adore coconut! I used a mini muffin pan and got about 22. Your friands look lovely…glad you enjoyed them! Have a great weekend!

  7. They look perfect. I loved the lightness and moistness of these tea cakes, so I am wondering how they would taste denser with almond meal.

  8. I love coconut so I am sure these would go down well with me - I recently found a flourless coconut and almond cake that I want to try - am interesting in the texture which would combine the two types of friands!

  9. I love coconut and I love friands. It's hard to imagine how small they would be if you made 20 instead of 12. And I have plenty of tupperware and LOVE it - you can never have enough xx

  12. I'm finally making it to your blog to see what you are doing...I'm finding lots of fun posts! I really enjoyed this recipe. I'm a coconut lover so these friands were fun for me. I love reading your posts which show off your other-side-of-the-world culture. We are so much the same and yet very different...it is fun to read about what you do. Your friands look perfect and make me want to bake them again.

  14. I actually have made these a couple of times as I was looking for ways to use up my egg whites last summer when we were making so much ice cream using egg yolks. They are so good! Yours are very pretty. And Tupperware...there's nothing that says "treats" like a Tupperware container, is there? YUM!
