FFwD - Chunky Beets and Caramelised Onions


This week's French Fridays with Dorie challenge is Chunky Beets and Icy Red Onions.  However, I hate raw onion, especially red onion, so I took Dorie's bon idea and made my salad with roasted beets, salad greens, caramelised onions (out of a jar), vinaigrette and fresh thyme.

I am not a huge salad fan ever, and even less so in the middle of winter.  I have to admit that this tasted OK (I am a fan of beets), and did surprise me - but not enough to make it again.

  1. Hmmmm...it looks like something was murdered on that plate...seriously red stuff! Could be because I am not a fan of beets, but I am thinking of trying it. I purchased one beet so we shall see if I get brave enough to create seriously red stuff on a plate or not. Thanks for the encouragement by saying you liked it.

  4. My family didn't eat this, but I loved it. I am surprised how many people have an issue with raw onions and beets. I thought it was just them. Dorie's method of soaking the onions twice in cold water, then ice water really changed their consistency. It was the first time I did it that way and was surprised at the results.

  5. Adding the caramelized onions sounded like a better idea than to use straight raw onions, but I had to take a pass. Though, I'm still allured by the beets' color.

  9. At least you gave it a try! We need to balance out the salads and the 'refreshing' entrees for the benefit of the FFwD folks in the southern hemisphere.

  10. Well now if there is anything I like better than beets it is caramelized onion. Interesting shot there though! lol. I am now going to drool at those orange cream cupcakes!

  12. LOL SisBoom - yes, it looks like an explosion on a plate - I think I was just so sick of fighting with the salad leaves and dressing and beets that I just thought "right" and snapped it as is.

  13. You are a good sport...adapted the recipe, making a salad in the midst of winter. You cracked me up, though, with the explosion on a plate comment...I think we've all felt that way when it comes to photographing food :)

  14. I think your idea to make this salad with more veges and flavors is a good idea. Mine, with just the onions and dressing, was not too wonderful and I'll not do it again...but your looks tempting.

  15. I love caramelized onions - great idea for a variation. I think I will add salad greens to this next time I make it, along with a bit of goat cheese.
