My French Fridays with Dorie choice for this week was made for me - Roast Chicken for Lazy People. You line a casserole with a slice of bread, season a chicken inside and out with salt, pepper and herbs, put the chicken on top of the bread, then throw in some garlic, onion, carrots and potatoes, cook on high heat in the oven for 90 minutes, and dinner is served!
The best part of the dish is the bread in the bottom of the pan:
Yes, it looks like some old piece of hide that's been left in the sun, but it tastes delicious! The bread absorbs the pan juices during cooking, and becomes flavoursome and meaty and rich.

Your chicken looks great! I'm jealous that your bread turned out so well. Mine got a bit mushy because of my overuse of olive oil. Another great post!

I wrote my post last night and put it on delayed time until Friday, and the one thing I did not like was the bread...lol...that's okay, right, we can still be friends??? I don't like soggy bread...it was crunchy on the very bottom but soggy on the top and there was no way to separate the two. Oh, well, that's what is so great about this group, lots of people, lots of different tastes!

ReplyDeleteWhat kind of bread did you use? And how did you get it to get golden brown instead of blackened? Mine was good, but much darker! Definitely will be making this recipe again. Your chicken looks great, too!
ReplyDeleteI really liked the bread too, though I put mine back in the oven to crisp up. Glad you liked this, but roasting chicken when it's 31 degrees? We won't be seeing double digits around here for months, unless they're below 0 ones!

ReplyDeleteHi Christina, I just used high fibre white sandwich loaf - nothing fancy, as I am not a huge bread eater and I didn't want to buy special bread.
