TWD - Peanut butter criss-crosses


Aren't peanut butter sandwiches comforting? Whether you like smooth or crunchy, or prefer your PB with jelly, there's nothing like a peanut butter sandwich to both comfort and nourish.

However, it was not until I was a grown-up baker that I discovered peanut butter biscuits. Any PB biscuits are seriously good - for reference, check out Duckie's
ode to peanut butter and peanut butter cookies.

Accordingly, I was pretty happy with this week's choice of Dorie recipe - peanut butter criss-crosses, selected by Jasmine of
Jasmine Cuisine.

All the other reviews I read of these cookies is that they are crisp - hmmm, don't know what happened there, but after baking for the required time, my biscuits were cooked but soft. Perhaps it is because I strayed a little on ingredients due to the limitations of my pantry cupboard - I remembered to buy the peanut butter and peanuts (honey roasted, of course!), but forgot to buy white sugar and butter. As a result, I used all brown sugar and Nuttelex in my biscuits.

No matter - why fret about what ain't broken? These biscuits were seriously good - which is a relief, because the recipe makes a lot of them (38 in my case, 40 for Dorie). I don't think they'll ever usurp the nourishing goodness of a PB sandwich, but these are good, nevertheless.

  1. Funny, I've never liked PB&J sandwiches, but I love love love peanut butter cookies. And in my book, soft ones are better than the crispy ones anyways.

  4. It took me until adulthood to like peanut butter at all! Never had a pb&j sandwich, but a pb & golden syrup toast sandwich is so good!

  5. Mine were very crisp, but then I got 57 out of a half recipe. I don't mind PB sandwiches, but I prefer the cookies.

  8. So many of my friends made PB&J sandwiches with grape jam on one side of the bread, the peanut butter on the other, then sandwiched together-I always stirred my jam and pb together and slathered it on. I got laughed at for that!

    These were so good-I would love to try the honey roasted peanuts in this one! Your cookies look spectacular!

  9. I know Dorie says not to use natural peanut butter, but wouldn't these be good made with honey roasted peanut butter? I think yours sound great, all soft and chewy! That's my favorite kind of peanut butter cookie.

  11. I learned to eat peanut butter and jelly in my adulthood...that was not served this way in Brazil :-)
    The cookies look yummie, I sure like them in the soft side ;-)

  13. Yum, I bet the honey roasted peanuts made them extra good! I intentionally underbaked mine so they'd be soft; I thought they were excellent that way.

  16. Peanut butter cookies are my favourite cookie, hands down. Unfortunately they aren't that common here in the UK. My favourite peanut butter cookie are Nutter Butters (from USA), I am hoping to find a great recipe that tastes like those.
