TWD - Creamiest lime cream meringue pie


This week's TWD recipe, chosen by Linda of Tender Crumb, had me licking my lips with glee. She chose Dorie's creamiest lime cream meringue pie, a dish which combines two of my favourite things - citrus and meringue, with a dash of ginger. Kah-zing!

I was fortunate in that a lady from work grows limes and gave me a big bag of juicy specimens, so I had plenty of limes on hand to make this. Thanks Lindy!

This pie did not disappoint - it was absolutely scrumptious. I shut my eyes to all the butter in it, figuring it is not every day that you get to eat something like this:

  7. How nice to get a bag of limes. I wonder what this would taste like with all the butter, but I couldn't shut my eyes to it, so I used less. It sounds like you really loved it!

  8. i used to hate meringue so intensely, with great passion...but recently i just realised that it was simply because i didn't eat meringue with all the extras which came with it. something citrusy made meringue taste perfect.

    I'd love to devour this meringue pie...

  10. Am I tempted? Hell yes! :P I made a lemon meringue pie on the weekend and I can imagine a lime meringue pie would be equally as gorgeous :)

  17. We loved this, too...I only made a half-size (7" pan) b/c I thought the guys wouldn't be all that interested in it...boy, was I ever wrong...they polished it off in one sitting. I kid you not. Yours looks great...and what I wouldn't give for a lady to give me a bunch of limes she grew!

  18. Looks fantastic! I only made a quarter recipe and wish I had more. I did reduce the butter a bit, but this combination was so wonderful that I'd suffer a few extra calories.

  20. I love the billowy meringue topping your pie - beautiful! I went all out using all of the butter in the recipe, but it was definitely worth the extra one...wait two hours on the treadmill.
