Ma che ti sei mangiato is hosting An Apple A Day, a blog event celebrating foods which can prevent stroke. This event requires a post about a recipe containing apples and one other ingredient from a specified list.
I have chosen to combine apples with cinnamon to make apple and cinnamon pancakes for Shrove Tuesday. These pancakes are low in fat, but are not so low in calories once combined with low fat icecream and maple syrup for serving. The recipe is from The Australian Womens Weekly - 501 Low Fat Recipes.
To make these pancakes, you will need:
1 cup self raising flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 cup skim milk
1 egg yolk
1/2 cup canned pie apple
2 egg whites
Mix together the flour, sugar, cinnamon, milk, egg yolk and apple in a bowl.
Beat the egg whites using an electric mixer to the soft peak stage, then combine with the rest of the batter.
Pour 1/4 cup of batter per pancake into a heated non-stick frypan, and leave until the batter forms bubbles on its surface before flipping carefully with a spatula to cook the other side. The mixture makes approximately 8 pancakes.
Serve warm either as is, with low fat vanilla icream and maple syrup, or sprinkled with lemon and sugar.
