FFWD - Osso bucco a l'Arman
For French Fridays with Dorie this week, our assignment was Osso Bucco a l'Arman.
We were supposed to buy four veal shanks for this purpose, but these were nowhere to be found here, so I just bought three pieces (~1 kilo) of beef osso bucco and made the full sauce recipe.
The mix of flavours in this dish is quite delicious - oranges, tomatoes and rich, melt in your mouth meat are the stars. I also took up the bon idee of making a rice pilaf to serve with my osso bucco.
This tasted good, and I like stew like dishes such as this one. Would I make it again? Maybe - but osso bucco is not a cheap cut, so it would be a dinner party/special occasion dish only.

We love Osso Bucco-we even had some the other night in Rome and it was wonderful. The Roman style was with peas and carrots!

ReplyDeleteI made mine with rabbit. Is that something you can get at a reasonable price? Its really good and cooks in about half the time. We will definitely make this one again! Like you the stews and braises are some of my favorite FF recipes!
ReplyDeleteInteresting to hear that there are such extreme price differences for this slice of meat in different corners of the world. Here in Germany this cut of meat is downright cheap.

ReplyDeleteSome of the ingredients in this book are hard enough to come by in the US. You seem to have added challenges on the other side of the world. I agree that this was delicious!
ReplyDeleteI am surprised that a fatty on the bone piece of meat is so expensive? It was tasty.
ReplyDeleteI made the same quantity of meat as you did and halved the sauce and there were still tons of leftovers! SOmetimes the quantities of liquidy thing in the book is a bit off... This was tasty and I'd make it again (at $7 a kilo here it's pretty good value).
ReplyDeleteBeautiful plating! I also can't believe how much the "inexpensive" cuts of meat are now cost. Same thing with short ribs! I just never believe it anymore when a cookbook author says it's cheaper. I agree that it was definitely not a weeknight dish!

ReplyDeleteYour photo of beef osso bucco really shows how delicious it must have been. I am making it later in the month and looking forward to it. Price was my problem. I was getting ready to leave town so just didn't want to waste a well-made recipe. Very nice.
