FFWD - Rice Pudding with Caramel Apples

French Fridays with Dorie this week is a dessert - Rice Pudding with Caramel Apples.  You can find the recipe online here.

I always love desserts, but at this point in time, it is a little naughty for me to be eating them.  Accordingly, I only made a quarter of the recipe and cut down on the sugar and cream.  This meant that my dessert was not as sweet as it otherwise should have been, but it meant that I was not breaking the rules of my diet as badly.

I quite liked this, but I liked the rice pudding component the best.  I have always liked rice pudding - Mum used to make for us as kids, and I still ask for it when I go home.

I'd make the rice pudding again, but probably skip the apples.

  1. Funnily enough, I'd probably like the apples more than the rice pudding - so if we're ever provided with an opportunity to share this, we'd be well sorted ;)

  2. Ha see now I will probably make the apples again before I make the rice. I too have childhood memories of rice pudding that are not as fond ;) Hoping mum doesn't make me eat it when I am home at Christmas (hey - we can have our own mini-Dorista meetup!!)

  4. Your rice pudding looks wonderful! I tend to cut way back on some of the recipes, too...wish I had the metabolism I did at 17!!!

  5. I also remember the rice pudding from the times when I was young. I really liked it to eat it again, so it was a nice recipe.

  6. Rice pudding is not my jumping-up-and-down favorite, so I'll probably make the recipe as written but scale it back. Maybe you can do that too in some time, especially if you love it.

  7. Looks great! I often find myself skipping the desserts we cover, because I'm constantly on some diet or another. Booo. I look at all the recipes I have to make up, and 85% of them are desserts. Uh oh. Your pudding looks delicious! I need to get to this one soon. I love rice pudding. I'm sick right now, so I didn't get around to cooking it, though.

  8. I actually find the apples to be more tempting than the rice pudding. But again, I've never been a huge fan of rice pudding.
Oh I'm on a diet too! And I've always reduced the amount of sugar on all Dorie's dessert recipes as I think that they are a bit too sweet for me. Glad you still got to enjoy this one.

  9. My husband ate most of the rice pudding and the kids and I ate mostly apples.

  10. Good for you for making a scaled down version!

  11. Making a scaled down version is a great idea. I don't know why I don't do it more often. We enjoyed the rice pudding and enjoyed the apples quite a bit too. We are always watching our weight and my husband is diabetic so we pick and choose our sweet carefully! Yours looks delicious!

  12. Yep - I would take the rice pudding before the apples too :-)

  13. Glad to hear you enjoy rice pudding. It seems to be a love or hate type of dessert. I always wonder about sites that have baked goods on them all the time. How can they eat that much dessert? I can only have it once in a while too.

  14. Fully agree. I loved the rice pudding and the plain caramel sauce which we made last month. But I don't think I cooked my apples long enough or maybe the pan wasn't hot enough because my apples didn't color very much.

  15. Glad that you indulged even though you're on a diet, especially because you enjoyed it. I used lowfat milk so it felt a bit more virtuous.

  16. And here I thought the apples were the star.....

  17. Your version of the Rice Pudding with the Caramalized Apples looks wonderful - rice pudding has a very enthusiastic fanbase at our house - so this recipe was well received - I actually like that you put a lot of apples on top - even if you were a bit partial to the rice pudding itself!
    Have a great week!

  18. Very nice recipe, i tried it yesterday. The only difference was that i added some hemp seeds. My children just love it, thanks a lot for your post.

  19. I am with you on cutting down on sugar. As I made Dorie's version of this I actually tried to decide if there was a low carb was to do it- sugar substitute, all that yummy cream is fine...but the rice, the main ingredient :) Nope, didn't think cauliflower would cut it so we enjoyed this one and toted it up to mandatory research. Glad you enjoyed it !

  20. I love rice pudding more now than I did when I was little - in fact I still often feel a bit unsure about it until I eat it and the warm comfort takes over - the caramel apples sound like it would make it so much more attractive to me

  21. My thoughts exactly. Hold the caramel sauce. When apples and caramels are put together, they belong on a stick. (I'm a caramel apple fan.) You do a better job of cutting recipes in half than I do. Unfortunately I usually make the whole thing and, if I forget to share it immediately, it sits in the back of the fridge or gets stale on the counter and I toss it out a week later. Not good to waste food. My resolution for Year #4 - minimize recipes better.
You do a nice job of that.

  22. I finally got around to making this, a year late. Rice pudding is a comforting childhood favourite for me, too. I loved both parts of this dessert, though I could see making them separately, especially the apples. They'd be marvelous in a lot of other applications.
