TWD - Thanksgiving Twofer Pie
Tuesday with Dorie is hosted this week by Vibi of La Casserole Carree, who has chosen Dorie's Thanksgiving Twofer Pie. It is called "twofer" pie because it is two pies in one - pumpkin and pecan.
Instead of using one of my usual pastry recipes for the tart shell, I used Dorie's Good For Almost Everything Pie Dough recipe. I have to admit that I am not in love with this pastry recipe. I found the dough very difficult to handle, and of a much firmer consistency than I am used to. I lavished lots of love and attention on my first attempt to make a tart shell with this pastry, leaving it in the fridge for the required period, but I found it very hard to roll, even after resting it for a few minutes on the bench. It cracked at the edges as I rolled it, and even when I managed to get something that I could roll into the pie pan, it became very delicate on baking, and I knocked the edges off when I removed the pie weights:
When love and attention didn't work, I went to the other extreme with my second attempt, rolling it straight out with no resting time. Although it was easier to roll, I still found the pastry difficult to work with, and the end result was tattier than the first:
However, I perservered with tart shell number 2, despite its appearance and obvious flaws.
Here is the pie mid-way, filled with just the pumkin pie filling and pecans:
The pecan pie filling is then poured on top, and voila, after baking, I ended up with the pie at the top of the post.
Despite my less than gorgeous tart shell, the pie turned out OK, and it tasted very good. The filling had a lovely smooth, soft consistency, unlike anything else that I have tried, and was delicious. I would make this again, but using my own pie crust recipe.
I am sure that the other TWDers made a better job of this than me, so do check out their interpretations at the Tuesdays with Dorie blogroll.
it looks yummy. Dont give up on that pastry - it does work!
ReplyDeleteSorry to hear about the problems that you had with the pastry-must have been very frustrating! But the pie itself looks delicious and I like the concept of the twofer!
ReplyDeleteIt looks delicious, even though you had difficulty with her pie crust. Confession time - I gave up trying to use hers and went back to my all-shortening one - it's much easier to roll and doesn't require chill time. Kudos for trying it twice though!
ReplyDeleteSorry about your pie crust woes. I love the in-progress shot... the filling looks scrumptious.
ReplyDeleteThis is the first pie of seen and it looks pretty good. Glad to hear you liked it. I'm making it on the 28th and serving it up the next day.
ReplyDeleteThank you so much for participating with me this Tuesday!
ReplyDeleteI'm happy your pie still turned out okay, after all this labor! If you enjoyed the taste of the crust and would venture to try it again sometimes, try pressing it directly in the pie plate instead of rolling it out!
If you are celebrating this week, I hope you have a very happy Thanksgiving!
Well, after all it's the taste that counts and I am sure it tasted great.
ReplyDeleteYour pie is perfect for thanksgiving :)
ReplyDeleteLove the pecans...
ReplyDeleteHi Tammy, it tasted pretty good and it all disappeared at work. I'll give it another go when ther next TWD pie comes up.
ReplyDeleteHi Lorraine the twofer is good - I can recommend it.
Hi Engineer Baker, from reading the forum, I think we had company! Ah well, next time.
Thanks Jacque - I'm going to pay close attention to everyone's tips to get this right next time.
Hi Pamela, the filling is just devine - sweet but not overly so -the family will love it.
Hi Vibi, thanks for hosting and for choosing something that I have never made before. Happy Thanksgiving to you too!
Hi Ivy, absolutely - no beauty contests one but it was good.
Hi Maryann, Happy Thanksgiving to you!
Hi Swati, I agree - pecans are good aren't they?
Mmmm, I am filled with empathy for your pie crust struggles... but that looks YUMMY!
ReplyDeleteIt looks fantastic! The first time I made the crust recipe I had some issues too! Happy Thanksgiving!
ReplyDeleteLooks great.
ReplyDeleteI heart Dorie's pie dough recipe.
I have a hard time with the crust and end up using my own recipe when we are due to make pies.
ReplyDeleteGlad you enjoyed it, though!

Hola, it seems a lot of people had trouble with the crust, even my friend who helped me out. She bakes hers all the time. She does not like the recipe we used! Oh, well. I think yours looks very delicious! Happy T-Day!
ReplyDeleteHi Jesse, despite it being no beauty, it tasted good.
ReplyDeleteThanks Steph. I think Vibi has given me the key to the problem, so I will venture to try it again next time.
Thanks Chocolatechic - I didn't mind the flavour, so I am going to press the dough out next time instead of rolling it, as suggested by Vibi.
Hi Jessica, it's a puzzle - but hopefully I know what went wrong now.
Hi Maria - absolutely. Happy Thanksgiving!
Thanks Anamika!
Hi Rosie, thanks.
LOL Gab'e Girl - I'm glad it wasn't just me. Happy Thanksgiving to you too.
The most important thing the pie was delicious. I think once you've found the perfect crust there's no need to look further.
