EwE - New Classic Meatloaf - March To Your Own Drummer


For Eating with Ellie this week, Kayte chose the theme of March to Your Own Drummer.  I interpreted this to mean I could make whatever I wanted to, so I made Ellie's New Classic Meatloaf from Comfort Food Fix.

This meatloaf may be a plain Jane, but it is very tasty.  I particularly liked how so many veggies were packed into the meatloaf itself (carrot, mushrooms, onion).  As you can see from the photo, they magically blend into the meatloaf so you'd never guess that they were there.

I served my meatloaf with frozen veggies, thereby increasing the vegetable serves in this dish even more.

Interesting recipe! I've never added that many veggies to it and wonder how it differs with oatmeal. Sounds good to me!

Yes, that is what it means, cook anything you want from any of her recipes. :-) I figured we all needed that for a week. Your choice is really good, I have made it and I know for a fact it is really good. And with all those veggies you feel good eating it. Believe it or not, my dish is made, photographed, and already banked in the posting lane for tomorrow is Thursday. I can hardly believe it, thank you for your patience. I made African Peanut Stew...and it was so good! Your meatloaf looks wonderful, wish I had a slice right now.

I like that idea of all the veggies 'melting' into the meatloaf. I think I will try this with hamburger patties.

I love it that there are lots of vegetables. A lot of meatloaf recipes I've seen are mostly meat which doesn't really make it a complete meal.

Looks like a wonderful recipe, love adding veggies to meatloaf, must pick up that cookbook.
