EwE - Spaghetti Frittata - Perfect Pasta


I chose this week's Eating with Ellie theme of Perfect Pasta.  Pasta is not one of my favourite foods, but I guess at the time of choosing the theme, I was trying to be alliterative.  Don't get me wrong - pasta is OK - but it is not something I ate much of growing up, hence I would not miss it much if I never had it.

The recipe that I chose is Ellie's Spaghetti Frittata.  Granted, this dish does not look very attractive - the spaghetti makes it look like something from a Halloween party - but it tastes really good.


The frittata contains spaghetti, spinach, onion, sun-dried tomatoes and cheese.  I'd probably replace the sun-dried tomatoes with fresh cherry tomatoes if I made this again, as I found the strong flavour of the sun-dried tomatoes a little out of place here.

It is funny you chose pasta but probably good to push yourself to try something you don't usually eat - and I like your take on it - I think it looks very pretty with the pasta

I never really knew that you didn't like pasta but I guess coming to think of it, there aren't a lot of pasta recipes here. This one looks great though! :D

Lol on choosing pasta...we are witnessing the rebirth of your dietary evolution: Pasta, soup, salad...where is this all going? lol I love the idea of this and those sun dried tomatoes sound excellent to me. Sometimes even if you don't think it looks good, the taste fools you into becoming a real fan...sounds like this was that for you. For me, I think it looks great. :-)

I really have to try this one. Pasta is one of my fave foods. Good choice. {BTW} what did you mean this to be theme wise?
