EwE - Thai Vegetable Curry with Tofu - Where's The Beef



For Eating with Ellie this week, Margaret chose the theme of Where's The Beef?  Interpreting this to mean vegetarian meals, I selected Ellie's Thai Vegetable Curry with Tofu.

I served this curry with brown rice for a bit of added oomph.  I really enjoyed it, and it was my lunch for work during the week that I made it.

this sounds very similar to a curry I had this week so I am sure it is lovely (and can't look at Where's the Beef without thinking of Cindy and Michael's blog)

It looks delicious, but I have never warmed to tofu. I think perhaps I have never had it cooked well!! Yours looks "well" cooked!!

That looks really good and healthy as well as pretty! I goofed...I thought I was supposed to make something with Beef so I did. I thought it was supposed to be kind of "hidden" and not the main attraction of the dish so I made Chipotle Beef-Stuffed Mushrooms. Oh, well, guess this week was open for interpretation! I like the one you chose, I need to try more tofu recipes.

Guess I should have been clearer for this one. I was looking at dishes with beef!! But this does look good.
