Vegetable Curry



I like a good curry, and as a change for work lunches recently, I made Michelle Bridges' Vegetable and Tofu Curry.  I got the recipe from her book, Total Body Transformation, but you can find it online here.

The flavours are bold and there is enough body from all of the vegetables in the curry to make it quite hearty.  It is also low in calories, so it is a pretty healthy lunch.

It doesn't look that attractive, but if you like curry, this could be a way for you to enjoy it regularly without dialling up the fat and calories.

I like the idea of this lighter curry! I adore curry but it can often be really high in fat.

Taste is far more important than appearance in the curry stakes - although this still looks tasty anyhow. I'm glad you liked it.

OOOHH!!! Curry! ONe of my favorite dishes. I like the idea of this one. Can I leave out the tofu??

Your vegetable and tofu curry looks very pretty, and healthy! I am not cooking enough tofu I think as I have seen a lot of recipes that look wonderful to me that use it...better step up my tofu game...lunches would be a great place to do that.
