EwE - Mini Pumpkin Jar Cakes


For Eating with Ellie this week, Peggy chose Mini Pumpkin Jar Cakes.  The jar cake/mug cake is currently having a moment, so these cakes fit in well with that.

The cakes are quick and easy to make.  I didn't have canned pumpkin puree (which is a rare commodity in Australia), so I boiled and mashed a small piece of Kent pumpkin. 

The resulting cakes can't be described as pretty, and they will never replace a traditionally made cake in flavour and texture, but if you want a quick easy dessert and don't have the time or energy for anything laborious, then these tasty little cakes fit the bill.

I served mine with a small scoop of vanilla icecream:

  1. I made men in ramekins. Loved these! I halved the recipe and it made two. Perfect for us.

  6. I don't have the little jars so I will need to use ramekins when I make it. Yours look so good, and that scoop of ice cream doesn't hurt either! Looking forward to this one...and was interesting to learn that you cannot get canned pumpkin puree there, always fun to hear what it is like in your part of the world.

  7. Yes, the things-in-jars tend is very big. I have made something in glasses, but I worry if I have to transport jars: salad for lunch could have glass croutons!! Pumpkin in a can seems very weird, I often pop some in the oven to roast when I am baking. They do look delicious!!!
