FFWD - Celebration Week #2: The Never-Doubt-Dorie Moment - David's Seaweed Sables



Welcome to week 2 of our French Fridays with Dorie celebration - The Never Doubt Dorie Moment.  This week, we had to choose the recipe from Around My French Table that might not have been our favorite or we enjoyed making or we were skeptical about, but which taught you a technique or gave you an idea or provided a lesson of some kind.

There were a number of dishes that I could have made for this week's submission.  Chopped liver anyone?  However, I decided to go with one of the weirdest sounding recipes in the book that, on first reading, I was sure had flavour combinations that would not work - David's Seaweed Sables.  We made these back in June 2012. 

Who had ever heard of toasting nori (sushi seaweed sheets), then crumbling then and putting them in a sable?  Icing sugar and seaweed is definitely not an intuitive flavour combination.  However, this recipe somehow just works.  When you first bite into the sables, they taste sweet, but then the saltiness hits you, then you get both at once.  The combination is quite intoxicating, a bit like the current trend for salted caramel.  These sables are also visually interesting because the specks of nori look like chives or some other herb - people are always surprised when I tell them it is seaweed.

My initial skepticism about Dorie's seaweed sables recipe was overcome, and I rather like these little sweet and salty cookies.  They would be great as hors d'oeuvres at a dinner party or casual get together, but are just as good to have on hand as a snack.

I'm just loving these celebration week posts, it is such fun to hear all the stories and details of why everyone likes what they do. Those cookies look great. Such fun thinking of you all meeting up in NYC, great photos!

Aww - love the picture :-) It was a real treat to finally get to meet you "in person". Glad to see you were able to connect with Betsy!

I remember liking the seaweed sables - who knew that seaweed and confectioner's sugar went so well together. Never doubt Dorie!

I JUST taught these in a "Parisian cocktail" class last night and convinced more doubters of the deliciousness of these :) Great choice!

We need to plan a BIG FFwD reunion next time you're in the states! I'd come out east to meet you :) The sable recipe was one I skipped---I was on vacation---but can see the sweet-salty appeal!

I love that you worked Dorista meetings into your trip. Very sweet. I, too, was skeptical of these sables. Unfortunately, they didn't win me over. I'd try them again if someone else made them for me, though. :-)

It's wonderful that you were able to have some Dorista meet ups on your trip! These sables were featured in my post today, as well. They were delicious and surprising.

I actually really like the idea of these! Probably I'm won over by the existing trend for salt in sweet desserts but I'm intrigued and interested in equal parts :)

Gaye, looks like you arrived home safely after two fun-filled weeks in the US. How wonderful that you got to meet Kathy, Cher and Betsy in person. Fabulous pictures! And, yes, those Seaweed Sablés were special indeed - one member of our family keeps requesting them!

I bought the nori sheets with every intention of making these back in 2012 but didn't get around to making them. I shouldn't have doubted Dorie (or found the time to do it). I loved seeing the pictures from your travels and wish I would have flown up to meet with you ladies.

That recipe was not a favorite, but it sure was interesting. I never even seen seaweed sheets before so I was determined to try this. Love your photos,

Gaye, it was so much fun to meet you. I'm glad that we were able to meet while you were visiting. Delicious choice for a never-doubt-Dorie moment! I couldn't choose just one, but these were on my list.
