EwE - Sugar snap peas, tomato and watermelon salad with feta



For Eating with Ellie this week, Kayte chose sugar snap peas, tomato and watermelon salad with feta.

This salad was very quick and easy to make.  I thought that snow peas were sugar snap peas, but looking to the above photo, apparently they are not.  I also skipped the onion as I hate raw onion, but otherwise followed the recipe.

This salad was really delicious and quite refreshing.  It would be wonderful at a summer barbecue.

I liked this one also. The flavors set each other off. It is a pretty and colorful salad.

I haven't tried this salad with sugar snap peas but they'd add such a nice crunch! :D

Yours looks fabulous. I picked this because I loved the photo in the book, it was so pretty, and I liked all the ingredients and figured it would hold well at summer picnics as everything can stand at room temperature for quite a long time. I wasn't too certain about the ingredients mixed together like this, but surprise to me, it was all wonderful and tasted great. Loved it and will make it again. Your peas were fine, the difference between snow peas and sugar snap peas is that the little pea inside is developed in the sugar snap peas and not in the snow peas...same taste basically. I don't usually care for red onion either...someone showed me how to soak them in water for a few minutes to take out some of the "bite" and that works for me, also the mint in the salad sort of negated that sharp onion bite somehow...not sure how, but it was more a mild onion flavor with the mint. Anyway, I loved it and yours looks wonderful! It's definitely going on a lot of picnics this summer. :-)

Beautiful salad. I just couldn't bring myself to make this one. Too many ingredients I don't care for. But it is lovely and looks totally refreshing.
