EwE - Savoury Carrot-Cashew Soup and Steak Fajitas



This week's Eating with Ellie recipe was selected by Sarah - she chose Savoury Cashew-Carrot Soup. 

This soup is really quick and easy to make, and its star ingredients are carrots and cashews, spiced up with onions, garlic, ginger, allspice and salt and pepper, and sweetened with honey.  The recipe is online here.

The end result is quite delicious.  My soup was not orange like the one in the photo, but still tasted really good.

Soup is all I feel like nowadays with this cold weather. I don't know how I'm going to cope with 3 months of it! 3 months of soup?

Oh my word that soup was so good. I expected it to taste more carrot-y but it tasted of cashews and I love cashews! Definitely going to be making this one often, so good. Yours looks good. Mine didn't look really orange either, more a dark yellow, guess that was from the cashews maybe, not sure, but it tasted wonderful. Like you said. And now you are caught up in this group as well...just like that! :-) I am actually all caught up in this group as well but it's early yet so no doubt that will fall by the wayside sooner or later. Maybe. :-) Anyway, your fajita looks wonderful and I giggled when you said you had it for breakfast but then the more I thought about it, I thought it really would be a great breakfast!! Congrats on being all caught up in the groups, you are a star! xo
