WWDH - Spicy Sweet Potato, Quinoa and Pancetta Soup


This week's Wednesday with Donna Hay pick comes from Chaya, who selected Donna's Spicy Sweet Potato, Quinoa and Speck Soup.  You can find the recipe online here.

I really liked the body that this soup had.  I made a half serving, subbed pancetta for speck and subbed cous cous for quinoa.  It made two hearty servings, which made for two very good lunches.

I bet the couscous was as good as the quinoa. I use quinoa for so many recipes, these days.

I love the idea of using couscous in soup. I've never tried it. I guess I always felt it would fall apart. Good to know!

This soup looks really good and just right for the colder days were are having now in the States. I could eat soup every day this time of year. This looks like a good one.

The air conditioning at my office has been running on full blast. This looks like the perfect soup to warm with during lunch break.

I love sweet potato and quinoa in soup - but also cous cous and it is an easier substitution :)

Beautiful. I changed the speck for bacon but kept the quinoa and really liked it. Couscous is really just small pasta, isn't it, so that would be brilliant. I'm going to post this soup next Wednesday as I am a bit out of sync.
