FFWD - Salmon Rillettes and Leeks Vinaigrette with Mimosa


This week kicks off a very fishy month at French Fridays with Dorie.  We have been avoiding the fish recipes, and now we are faced with a glut of them.

First cab off the rank is Salmon Rillettes, part three of the rillettes trilogy.  This one was my least favourite - I liked the sardine and tuna versions much better.  The salmon version contained smoked salmon, poached salmon, shallots and chilli, among other things.  It really was not my bag.   I ate a half recipe spread on a toasted English muffin for dinner one night, and I was glad that I hadn't tackled this one for breakfast - it was very "fishy".

I also caught up on the Leeks Vinaigrette with Mimosa, which was on the list while I was away on holidays:


Now this recipe I did enjoy. I was sceptical until I tried it, but I liked it very much.  The leek is lightly boiled, then coated with a vinaigrette and finally, a hard boiled egg is grated on top.  It sounds really weird, but it tasted great.

The only recipe that I have missed now (on purpose) is the salmon in a jar - I kind of feel that I have to tackle it before we get to the end.  We'll see.

I don't think I would like something too fishy for breakfast either. Though for dinner o.k..
I am skeptical about the hard boiled egg grated. I am glad that you enjoyed it.

That leek recipe really was a surprise. I still have a few to catch up with, but the list is not too long so I'm hoping to get through it before we wrap the book up. Well done you for only missing one so far!

Sorry you didn't like this much. I wonder how it would be on a bagel?

I have 5 missed recipes and am so uninspired about most of them. I keep trying to work up interest to make them up.

Sorry the salmon was not for you…we really enjoyed it. I don’t like sardines so I never made the sardine version. I however, did enjoy the Leeks. Have a great weekend!

I agree that the Salmon Rillettes were very "fishy" as compared to the tuna and sardines which, surprisingly, were not. Go figure. So I understand why you did not like them if you're not a "fishy flavor" kind of gal! Do you like Lox & Bagels? If so, Betsy is right, you might have enjoyed this better on a bagel. As for the leeks. I LOVED this dish. I'm not sure I've ever tasted it in France although it's supposed be a classic in every bistro, but I sure enjoyed it at Chez Hirsch. Glad you hit 500% this week, Gaye.

Glad you liked the leeks.. I think any smoked fish will taste more intensely fishy.. I wonder if you would have liked it more with just the poached salmon?

You should do a third of the recipe for the salmon-in-a-jar which you should finish in a flash otherwise it might go to waste! Your rillettes and leeks look good!

You are an adventurous cook/eater. That salmon in a jar thing was one of the reasons I thought maybe this wasn't the group for me...lol. I like the idea of the leeks, though, those look really good. I wish I was as adventurous as you.

Maybe you can buy a very teeny, tiny piece of salmon to do the whole jar thing? (That's what I do when I know I am not going to be a fan - I understand your trepidation, that dish was probably my least favorite in book)

Funny, I liked the salmon but wasn't a big fan of the other two rillettes. I guess that's why it's so nice to have choices :-) I'm glad you enjoyed the leeks.

I enjoyed the salmon rillettes, but my mother said she would have preferred them with a little cream or mayonnaise. The leeks were a huge hit for us, too. I love how pretty they are.
