Linzer Biscuits with Plum Pudding Jam


Another addition to my Christmas boxes this year was Dorie Greenspan's Linzer Biscuits, cut into the shape of snowflakes.  You can find the recipe for these biscuits here.

The special part about these was that I sandwiched them together with Plum Pudding Jam by Amanda Jammm from Hobart in Tasmania.  This jam smells like Christmas in a jar - and it tastes like it too.  I hope Amanda's jams become available on the mainland soon, because they are sensational.  (I will admit to eating the other two jars of her jam with a spoon out of the jar.)

The only thing to be wary of when making these biscuits is to not roll the dough too thinly and to try and work quickly while the dough is still chilled - otherwise, it can become a bit of a nightmare trying to cut out the shapes.  (Hmmm, wonder how I know that ...)

However, they are worth the effort - these biscuits are delicious, sandwiched with jam or not.

these look very beautiful and the plum pudding jam sounds just right for them. I have snowflake cutters but the detail seems to disappear during baking - maybe I should try them again as I love how yours look

Snowflake cookie cutters sound challenging! You've done a great job at having them turn out looking like snowflakes :-)
