WWDH - Green Curry Chicken with Sweet Potato


This week's Wednesday with Donna Hay recipe is Green Curry Chicken with Sweet Potato, chosen by me from Off the Shelf.

My biggest problem with this one is that when I went to use my green curry paste, it had dried out - so I had to use curry powder instead.  That is why my curry is yellow rather than green.  Oh well.  I also sliced my chicken breasts rather than just have a chunk on the plate, like the recipe stated.

This curry tasted just fine, but it didn't wow me.   I get it though - Off the Shelf is meant to be tasty meals made with ingredients "off the shelf", so it's not meant to be fancy or the best thing you have ever tasted.

Oh what a shame about the green curry paste. I wonder why it dried out so much. Sometimes putting a layer of oil on top helps.

I haven't tasted mine yet. I made it a little while ago and we are having it for dinner. I wanted to get it out on the blog so since I was behind schedule, I jumped ahead, at least for tonight.

It looks delicious and I am disappointed, you don't love it. I will let you know after I eat mine.

Ah, yes. But sometimes a good standby meal is just what I need. Something easy I can get out on a busy night. I love sweet potato, so this went down easily.

I sliced my chicken for the curry dish as well as it's just so much nicer not having to do that at the tables, sawing away at the poor bird. I used the green curry paste and mine did not have a green color, but when I use red curry paste, it has a pinkish color. Maybe I should add more!! This was a great choice, seeing yours makes me want to make it again soon.
