FFwD - Spur-of-the-moment Vegetable Soup


This week's FFwD recipe is Spur-of-the-moment Vegetable Soup.  Basically, you fry up some onion, carrot, garlic, ginger, celery and thyme, then add chicken stock and a cubed potato, simmer it for a while, puree it and then bingo - soup.

I don't think this looked or tasted much different to the Paris mushroom soup, but hey, that's just me.  I won't make this again - it just didn't grab me.

Oh that's a shame - we loved this one! Still, it's better soup weather here than down there I guess!

I kind of stopped reading the directions and threw whatever vegetables I wanted to use up in the pot. It was darned ugly, but tasty enough... (I am pretty sure no garlic or ginger were involved).

Maybe for you Cher's lead of using it as a base and allowing yourself to be creative... you might enjoy it more...Oh well at least you tried it.

The mushroom soup wasn't a hit for me, but I thought this one was good. Not special occasion good, but weeknight dinner good.

Oh, well. Can't love ALL the recipes. It does make a good base for a stockier soup.

Yeah, it's not good when carrot soup tastes the same as mushroom soup :/ At least you had some yummy brownies for dessert!

Sorry you didn't like this one. I really liked the broth and was happy that my family like the collard greens in it.

I must have done something different because my soup didn't look like yours...hmmm...at any rate, yours looks good, and we did love what mine turned out to be. Funny how that happens.

I'm late posting this week and will be making the soup today. So far it seems I'll be making FFwD stone soup - adding Mary's quinoa, Elaine's collards and so forth. Have a great weekend!

I think I would agree with you on this soup - my mum made a similar soup but not pureed and I disliked vegie soup for years as a result - and there are so many more interesting vegetable soups than this

I did a little tweaking on my FFWD veggie soup and it turned out pretty tasty but I am a soup lover;-)

awww... I think you should give it another go, maybe leave out the herbs and try a different combo of veggies? Nice effort though!

When you have all kinds of leftover veggies in your fridge, perhaps you should throw them all in a pot, season them heavily, roast 'em, add some broth, and puree the heck of the entire production. If you're hungry enough, it may taste delicious. Then, maybe not.
