WWDH - Baked Carbonara


This week's Wednesday with Donna Hay pick was Baked Carbonara, chosen by Margaret.  This dish is a baked fettucine with cheese and bacon.  

I used spinach fettucine, red leicester cheese instead of parmesan, and light evaporated milk instead of cream:

Like that you used spinach pasta...and evaporated milk instead of cream...lighter and yet flavorful.

This was a surprise hit for me, I didn't think I would like it that much as we love my go-to Carbonara recipe. This may be my go-to Carbonara recipe from now on. I used shallots because there wasn't a leek to be found at the market when I was in search. It was so good...yours looks delicious and I will try it with the leeks when I come across those next...for some reason, leeks are "optional" in the markets here and they don't always stock them.

I like the idea of the spinach pasta. This was good. Definitely a repeat!
