TWD - Cornmeal and Fruit Loaf




 I adore cakes that are not overly sweet and contain fruit.  This week's Tuesday with Dorie recipe, chosen by Caitlin of Engineer Baker, was Cornmeal and Fruit Loaf, and ticked all of my boxes.

This cake was light, with a bit of crunch from the cornmeal, and sweetness from fresh and dried pear.

Debating whether or not I want to make this one, the combination sounds a bit odd to me, so thought I would pop over and see what you thought. If you like it this much, I think I should give it a go. Thanks! It looks very pretty.

I also adore cakes that aren't overly sweet and contain fruit! I don't think I've ever seen dried pears in a store before--I'll have to keep an eye out for them. You're always introducing me to things I've never tried!

It looks delicious! I like not-so-sweet cakes with fruit, but the cornmeal scared me away from trying this one.

I think pears are underused and underrated, don't you? Great to see a good recipe for 'em. I'm also guilty of not using cornmeal very often, so this is a welcome reminder on that front, too!

great idea to use pear. not a lot of people like the texture but i think baked pear is just lovely!! GLAD YOU LIKED IT!

Whatever i have baked with Cornmeal so far has been deliciously exciting and this loaf sure proves it again!
I like that too , jus sweet enough with some nice fruit thrown in.

I just love baking - and eating - and using cornmeal means I can pretend that whatever I make is just that little bit healthier!

This loaf looks so good and sounds really interesting with the texture and taste of the cornmeal and mixture of dried and fresh pear. I really want to try this recipe.
