TWD - Carrot spice muffins




This week's Tuesday with Dorie choice is positively healthy - it contains no butter, and has oodles of carrots!  Nancy of The Dogs Eat The Crumbs has chosen Dorie's Carrot Spice Muffins, described by Dorie as a muffin-version of a carrot cake, but less dense and sweet. 

As well as a cup of grated carrots (thank goodness for the grater attachment on my food processor), these muffins contain walnuts for some crunch, and a good dash of cinnamon.

 

I think these muffins tasted best the next day, once all the flavours had melded.

These are my favourite muffins. I make them quite often. Who knew something so healthy could be so delicious! :-)

They look really good...especially in their little blue outfits, makes them look like they are going to a party! I might make these up but am taking a 2 week vacation from the blog, going on vacation and getting Matt ready for transfer to college. I'll keep tabs on what you are making though, as I can read blogs anywhere!!

How great do these muffins look? I love the blue papers. I have to admit that I haven't been baking as much from Dorie's Baking book. I need to crack it open more!

I guess these are healthy, I didn't think of that! I really liked them. I loved the spices they contained.

I agree your muffins look so happy in their bright wrappers! I feel bad that these didn't last long enough to enjoy the second day flavors at our house!

I love (almost) anything with carrots. My mom likes to tell a story of how I ate so many jars of carrot and of sweet potato baby food that my nose turned orange. I still love carrots and sweet potatoes, but thankfully, my nose hasn't changed color!

The look terrific! I didn't make them until 7 PM on Tuesday and didn't try them until the next morning, so it worked out perfectly to eat them after they'd rested a bit.
