FFwD - Cola and Jam Spareribs


You are probably just as surprised as I am to find that recalcitrant me has actually completed a French Friday with Dorie challenge by Friday instead of the following Sunday.  Hooray!

This week's challenge sounded very appealing to me - Cola and Jam Spareribs.  I have wanted to make Nigella Lawson's cola baked ham forever, so for me, this was the next best thing.  The recipe is dead simple - baste pork spare ribs with  melted apricot jam, bake them for a while, then finish off by baking them some more in a cup of cola.  As expected, the end result is sweet, sticky ribs, which are even better the next day.

I served my ribs with baked asparagus (again!) and a microwaved potato dusted with all purpose seasoning and filled with cottage cheese, and some Outback Spirit Rosella and Cranberry Chutney on the side (which is fabulous in its own right - purchased from the Melbourne Good Food and Wine Show):

  1. I'm intrigued. I prefer sweet ("Texas style") BBQ, so this sounds like it would be right up my alley. Bring on the wet wipes!

  6. I think this is the first time I make FFWD's recipe BEFORE Friday! I always cook/bake the same day. Hooray for being on time! I am glad you enjoyed this dish. These ribs didn't have the same luck at my house.

  7. Good to read that you liked the ribs...we thought flavor was lacking, but we are used to adding BBQ sauce, etc...so we just added it again for this meal and it was really good. The ribs were tender and juicy and with the additional sauce the flavor was great too, but your post is interesting to me as you liked the flavor without additional ingredients.

  11. I made ours closer to how you made yours, I was out of OJ and ginger, so mine was more out of being too lazy to go to the store! But, they did turn out pretty tasty just the same - your pictures look great!

  13. Looks good! I never heard of putting cottage cheese in a baked potato before. That's a neat idea. The farthest I've ever deviated from sour cream is plain yogurt. I'll have to give cottage cheese a shot.

  22. I've seen a few cola recipes - I think there is a chicken one out there somewhere - but I'v always been a bit skeptical about them. But if it works for Dorie, then who am I to argue!

    Hi Crusader, not really barbecue - it is quite sweet andnot that spicy despite the 5 spice and ginger.
